Monterey Mushrooms has worked with the United States Department of Agriculture to replicate what happens in nature when mushrooms growing in the wild are exposed to sun light.  Mushrooms respond to UV light in the same way as humans and other animals to convert a form of cholesterol into vitamin D.  By exposing our mushrooms to UV-B light for a very short period of time, we assist the mushroom into producing very precise levels of vitamin D in a completely natural way.   As a result, mushrooms can easily provide 100% of the recommended value of vitamin D.  Mushrooms are the only source of vitamin D in the produce aisle and one of very few non-fortified food sources.
