Monterey Mushrooms & Olive Oil Bruschetta

Ingredients:

  • 1 8 oz. package Monterey White Mushrooms (quartered)
  • 3 tbsp olive oil
  • 2 tbsp salt
  • 2 tbsp cleaned basil leaves julienne
  • 3 cloves garlic (chopped)
  • 1/4 cup shredded Parmesan cheese
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • salt and pepper
   


Preparation:

Heat 3 tablespoons olive oil in large sauté pan; add quartered mushrooms and sauté for five minutes. Add salt; cook three minutes longer and cool mixture. In large mixing bowl combine basil, garlic, cheese and mushroom mixture. Add olive oil and vinegar; adjust seasoning. Serve chilled with sliced baguette or as a great addition to any salad or grilled fish. Enjoy!
