Mushroom Quiche

Add a fresh fruit or green salad for a satisfying meal
Ingredients:
  • Pastry for 9-inch one-crust pie
  • 1/2 lb. (8 ounces) Monterey Clean N Ready® Sliced Mushrooms
  • 1/3 cup chopped green pepper
  • 2 tbsp butter or margarine
  • 4 eggs, beaten
  • 1-cup plain low fat yogurt
  • 2 tbsp instant minced onion
  • 3/4-tsp salt
  • 1/8-tsp rubbed sage
  • 1/8-tsp nutmeg
  • 1/8-tsp pepper
  • 3/4-cup skim milk
  • 3/4-cup (3 oz.) shredded Swiss cheese
 


Mushroom Quiche!

 

Preparation:

Line 9-inch pie plate with pastry. Flute edge. Set aside. Preheat oven to 375º F. Sauté mushrooms and green pepper in butter or margarine until tender and liquid evaporates. Set aside to cool slightly.

Combine eggs, yogurt, onion and seasonings. Stir in milk, cheese and cooked vegetables. Pour into pastry shell. Bake about 40 minutes or until knife inserted 1 inch from edge comes out clean and top is lightly browned. Let stand 15 minutes before serving.
