Mushroom Lettuce Wraps

·            2 tablespoon olive oil

·        8 ounces shittake mushrooms, destemmed and sliced

·        8 ounces oyster mushrooms, torn in half

·        8 green onions, thinly sliced (green part only)

·        3 shallots, thinly sliced

·        1 tablespoon garlic, minced

·        1 tablespoon ginger, minced

·        2 tablespoon soy sauce

·        2 tablespoon sesame oil

·        1 head of butter lettuce, leaves separated

 

Directions

 Heat olive in a wok or large frying pan over medium-high heat. Once hot, add the shallots and cook for 30 seconds. Next add the mushrooms, ginger, and garlic and cook for 3 minutes, stirring continuously. Finish with the sesame oil, soy sauce, and green onions. Make sure that all of the ingredients are well incorporated.
