Mushroom Pasta

  • 12 oz Rigatoni
  • 1 tbsp oil
  • 1 1/4 lb sliced Mushrooms
  • 1  chopped onion
  • 1 tsp dried thyme
  • 1 tsp minced garlic
  •  3/4 cup white wine
  • 1 cup reduced-sodium chicken broth
  • 3  tbsp mascarpone

 

Directions

1.  Cook 12 oz rigatoni.
2.  Heat 1 Tbsp oil in large nonstick skillet over medium-high heat.
3.  Add 1 1/4 lb sliced mushrooms, 1 chopped onion, and 1 tsp each dried thyme and minced garlic.
4.  Cook until golden, 7 minutes.
5.  Add 3/4 cup white wine and reduce by half.
6.  Stir in 1 cup reduced-sodium chicken broth and 3 Tbsp mascarpone.
7.  Toss with pasta, Parmesan, and parsley.
