Mushroom Potato Salad
Serve warm or chilled: It's delicious either way

Ingredients:

  • 1 1/4 lbs. potatoes (5 medium)
  • 1/2 lb. (8 oz.) Monterey Clean N ReadyŽ Sliced Mushrooms
  • 1/2 cup dairy sour cream
  • 1/2 cup mayonnaise or salad dressing
  • 1 tsp salt
  • 1 tsp dill weed
  • 1/4 tsp pepper
  • 1/3 cup thinly sliced red onion
  • 1/4 cup chopped dill pickle

 

 Mushroom Potato Salad!
Preparation:

Wash potatoes. In medium-size saucepan heat 2 inches salted water to boiling. Add potatoes. Cover. Boil gently 25-30 minutes or until potatoes are tender. Remove. Add mushrooms to same water. Simmer, uncovered, 5 minutes. Drain thoroughly.

Meanwhile, in large bowl combine sour cream, mayonnaise, salt, dill weed and pepper. Peel and dice potatoes. Add to dressing along with mushrooms, onion and pickle. Toss gently to coat. Serve immediately or cover and
chill.
