Cold Mushroom Special
A low-calorie treat

Ingredients:

  • 1 lb. Monterey Clean N ReadyŽ Sliced Mushrooms
  • 1 tsp salt
  • 1 medium-size onion, thinly sliced
  • 1/4 cup red wine vinegar
  • 1/4 cup water
  • 1 tsp snipped parsley
  • 1 sprig snipped dill (optional)
  • 1 tbsp sugar


 

Preparation:

Place mushrooms in glass bowl, sprinkle with salt and cover. Let stand at room temperature several hours. Combine remaining ingredients in saucepan. Add mushrooms and simmer 8 minutes. Return to glass bowl. Cover and chill. Serve cold.
