Jellied Vegetable Consommé

Great on a hot summer night

Ingredients:

  • 2 cans (10 1/2 ounces each) condensed beef consommé, undiluted
  • 1 lb. (16 oz.) Monterey Clean 'N Ready® Mushrooms, finely chopped
  • 1/2 cup chopped celery
  • 1 tbsp lemon juice
  • 1 tbsp aromatic bitters (optional)
  • Dairy sour cream

Jellied Vegetable Consomme!

Preparation:

Combine consommé, mushrooms and celery in saucepan. Simmer, covered, 10 minutes. Remove from heat. Stir in lemon juice and bitters. Pour into serving bowls and chill at least 4 hours. Serve with dollop of sour cream. Garnish with snipped parsley.

Variation: To keep this soup low in calories, omit sour cream.
