Arguably the most important and Instagram-able meal of the day, BREAKFAST! I LOOOOVE BREAKFAST! This is my go-to breakfast bowl for Saturday or Sunday morning. Simple, healthy, delicious. The Let’s Blend® Italian Finely Diced Mushrooms add flavor, texture and boost my morning nutritional intake.

There’s one thing better than a plateful of breakfast fixings: a BOWL full of breakfast fixings. Let all those tasty foods kiss for an incredible infusion of flavor in this breakfast hash recipe. Take a generous spoonful of slightly browned sweet potatoes, smokey sausage, and savory mushrooms. It’s all blended with your favorite vegetables: bell pepper, onion and cherry tomatoes. Top it all with creamy avocado cubes and a steamy fried egg— and it sure beats a bowl of cereal any day.

Blended Breakfast Bowl Hash

Description

Arguably the most important and Instagram-able meal of the day, BREAKFAST! I LOOOOVE BREAKFAST! This is my go-to breakfast bowl for Saturday or Sunday morning. Simple, healthy, delicious. The mushrooms add flavor, texture and boost my morning nutritional intake.


Ingredients

  • 8 oz. Monterey Mushrooms® Sliced or Whole (Whites or Baby Bellas)*, finely diced
  • 2 tsp Italian Seasoning 
  • 1/2 lb ground pork sausage
  • 1 medium sweet potato, diced
  • 1 Tbsp olive oil
  • 1/2 cup Green bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 2 eggs

*Selecting Monterey Mushrooms® "High Vitamin D" Mushrooms will provide you with 400 IU's of vitamin D per 3 oz serving, which is 50% of the Daily Value as recommended by the FDA. 


Instructions

  1. Finely dice mushrooms.
  2. Combine mushrooms, ground sausage and Italian Seasoning in a bowl. Mix well. (Or skip this step and add both to the oiled pan.)
  3. Wash and dice the sweet potato, bell pepper, onion, tomatoes, and avocado.
  4. Heat the oil in a large, nonstick skillet over medium-high heat. Add the mushroom sausage blend. Cook for 10 minutes until the mushroom mixture is browned and internal temperature reaches 160°F.
  5. In a separate medium, nonstick skillet, heat oil over medium heat. Add sweet potatoes and cook until soft, about 7 minutes. Add bell peppers and onions; cook until slightly browned, about 5 minutes.
  6. In a separate small or medium, nonstick skillet, heat oil over medium heat. Fry egg to the desired doneness.
  7. Mix the mushroom-sausage mixture into the veggie mixture. Top with avocado, cherry tomatoes, and egg.
