Royal for a Reason

In the specialty mushroom realm, King Trumpet mushrooms (Pleurotus eryngii) occupy the throne! Known to be the largest of the oyster mushroom species, King Trumpets have a distinctive look, with thick, long stems and a somewhat flat, golden-brown cap.

King Trumpet mushrooms are capturing the hearts of professional and home chefs alike — and have diners singing their praises. They have a firm, meaty texture that makes the perfect meat substitute, including “bacon” for sandwiches or salads. Their delicate, nutty flavor also allows them to seamlessly replace seafood, like with these rich vegan scallops!
