1. Portabella Fajita Kebabs

Take all of your favorite fajita ingredients and line ‘em on a kebab stick! Start by dicing up some zesty red onion and jalapeños for a sharp kick. Add some boldly colored red, yellow and orange peppers, and let’s not forget some savory mushrooms. Baby Bellas make for great bite-size chunks— and when paired with your choice of meat, give your kebab a burst of texture and rich flavor. What makes these delights so indulgent is the baste: a bright cilantro lime dressing. Smother it generously to “fajita” the right way.

INGREDIENTS

  • 1 each red, yellow and orange bell pepper
  • 1 large jalapeño (optional)
  • 1 medium red onion
  • 16-32 oz shrimp (jumbo or large are recommended), steak or chicken (or other meat of your choice)

  • 2 cups fresh cilantro, coarsely chopped
  • 1 garlic clove, peeled and sliced
  • ¼ cup lime juice
  • 2 tsp maple syrup or honey
  • ½ tsp ground coriander
  • ½ tsp sea salt
  • ½ cup extra virgin olive oil

These grill-ready sticks make for a rather healthy meal, as they feature nutritious asparagus, hearty mushrooms and bright red grape tomatoes— all with a lovely lemon undertone. Brushed in extra virgin olive oil and salt and pepper, this is one mouthwatering summer treat.

INGREDIENTS

3. Steak & Portabella Mushrooms Kebabs

Steak & Portabella Mushrooms Kebabs

These kebabs are a grilling twist on an American favorite: steak and mushrooms. But it’s not exactly easy to walk around the backyard trying to cut a big piece of steak on a flimsy paper plate. 

So instead of serving the traditional slab, “wow” guests at your cookout with these tender, bite-size pieces. They’re easy to walk around with, share or slide off the skewer for pre-cut kid-sized portions. 

The hearty Portabellas add a deeper, richer umami flavor than traditional Baby Bellas and steak. Plus, there’s virtually no preparation needed on picnic day! Just place the skewers on the grill and go. 

INGREDIENTS

  • 16 oz Monterey® Sliced Portabella Mushroom* pack, cubed
  • 1 lb of Sirloin or Skirt steak, cut 1 inch thick

MUSHROOM MARINADE INGREDIENTS 

  • 6 tbsp extra virgin olive oil
  • 6 tbsp balsamic vinegar
  • 6 tbsp soy sauce
  • 4 tbsp Worcestershire sauce
  • 2 tbsp Italian seasoning

STEAK MARINADE INGREDIENTS 

  • 6 tablespoons olive oil
  • 6 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • kosher salt
  • pepper
  • 1 tablespoon minced fresh rosemary

4. Chicken Caesar Kebabs with Grilled Romaine

Chicken Caesar Kebabs with Grilled Romaine

All you need for these yummy chicken Caesar salad kebabs are some veggies, mushrooms, and roasted chicken breast. Of course, you’ll need to make a marinade, but we kept it simple. Whereas a traditional Caesar dressing contains Parmesan cheese, lemon juice, olive oil, egg, Worcestershire sauce, garlic, and black pepper, we know that can be a lot to mix. That’s why we simplified our Caesar marinade, so you can buy a premade dressing and just grab some extra ingredients.

These grilled chicken and mushroom kebabs make an excellent side, and the warmed romaine hearts pair perfectly for a healthier salad pairing. Heck, you could even bring a huge tub of romaine to your cookout and slide your grilled kebab fixings off the skewers to eat just on top of a salad. The choice is yours! Either way, this is one creative chicken salad your picnic guests are sure not to forget!

INGREDIENTS

CAESAR MARINADE INGREDIENTS 

  • 6 tbsp extra virgin olive oil
  • 6 tbsp Dijon mustard
  • 4 garlic cloves, minced
  • 1 cup Caesar dressing (not creamy!)
  • 1/2 cup Parmesan cheese, shredded

5. Hawaiian Mushroom Kebab

Hawaiian Mushroom Kebab

Teriyaki is quite an interesting flavor: a combination of both sweet and sour, with a touch of salt and an equally scrumptious hint of honey. These Hawaiian kebabs owe their incredible taste to their teriyaki baste, but even the best sauce needs to be paired with the right ingredients. Say aloha to some bright pineapple chunks, which are warmed and charred to bring out all the lush, tropical juices. Paired with red pepper, sweet onion and mushrooms, you get a myriad of textures on each skewer— for a taste of the island life right at home.

TERIYAKI BASTE

  • 1 cup light brown sugar, packed down firmly in the measuring cup
  • 1 cup mirin (or substitute with 1 cup of white wine or dry sherry)
  • 1 cup soy sauce
  • 1 tbsp sesame oil
