Description
This recipe puts a delightful twist on a classic cheeseburger. You can get as creative as you want with our fajita mushroom cheeseburger quesadilla by adding your preference of toppings!
Ingredients
- 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Fajita Mushroom Kit*
- 1 small onion, finely chopped
- 1/2 pound lean ground beef (optional)
- 1 clove garlic, minced
- 8 flour tortillas
- 2 cups cheddar cheese
- 1/2 small red onion, sliced
- 1 tomato, thinly sliced
- 1/4 cup dill pickles, sliced
- 1 cup shredded lettuce
Secret Burger Sauce
- 1/2 cup mayonnaise
- 2 tbsp ketchup
- 2 tbsp yellow mustard
- 2 tbsp relish
- 2 tbsp onion, finely diced
- 1 tsp white sugar

Instructions
- Heat a tbsp of olive oil in a medium skillet over medium heat. Add the mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat.
- Add the Fajita sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes. Set aside.
- In a large saucepan, add beef, onion, and garlic, and continue to cook for 10 minutes or until ground beef is cooked through.
- Meanwhile, combine all the secret sauce ingredients in a bowl. Set aside.
- Place one tortilla in the bottom of a dry grill pan. Sprinkle with cheese, red onion, tomatoes, and dill pickles. Spoon on the meat mixture and the saucy Fajita mushrooms. Top with the second tortilla. If your grill pan comes with a Panini press (lid) place preheated press on top of the tortilla. If no press is available, carefully flip the quesadilla over using a spatula.
- Remove from the skillet and cut into wedges. Serve topped with fresh shredded lettuce and secret burger sauce.
Note:
This recipe works really well without the meat as well. Feel free to omit the ground beef in step 3 to make this a meatless meal.
