Description
These vegetarian fajitas are the perfect meal for dinner with your friends or family. They’re also great for large get-togethers, just increase the number of ingredients you use to match the serving size of the people you want to feed!
Ingredients
- 2 bell peppers, thinly sliced
- 1 medium onion, sliced
- 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Fajita Mushroom Kit
- 2 tbsp olive oil (optional)
For Serving
- 8 tortillas
- Salsa (pico de gallo is perfect)
- Shredded cheese (or cotija)
- Sour cream
- Guacamole

Instructions
- Warm a large saucepan over medium heat. Add 2 tbsp of olive oil, if desired.
- Add the bell peppers and onion to the saucepan and saute for 4-5 minutes, stirring frequently. Move sautéed veggies to a plate.
- Add a splash of olive oil, if desired, to the same saucepan. Add the mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat.
- Add the Fajita sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes.
- Serve with warm tortillas and extra toppings such as salsa, shredded cheese, sour cream, and guacamole.
