These vegetarian-friendly fajitas shed the extra calories, fat, and sodium that traditional meat fajitas would have, but without sacrificing the quality of flavor! Made with our savory Sizzling Sautés™ Mushroom Kit, bell peppers, onion, and your choice of salsa, shredded cheese, sour cream, and/or guacamole, these vegetarian fajitas are the perfect meal for dinner with your friends or family. They’re also great for large get-togethers, just increase the number of ingredients you use to match the serving size of the people you want to feed!

Since this recipe doesn’t require many ingredients to assemble, these zingy fajitas only take 20 minutes to make. Sizzling Sautés™ Mushroom Fajitas


  • Prep Time: 10 Minutes
  • Cook Time: 20 minutes
  • Yield: 4 Servings

Description

These vegetarian fajitas are the perfect meal for dinner with your friends or family. They’re also great for large get-togethers, just increase the number of ingredients you use to match the serving size of the people you want to feed!


Ingredients

  • 2 bell peppers, thinly sliced 
  • 1 medium onion, sliced 
  • 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Fajita Mushroom Kit
  • 2 tbsp olive oil (optional)

For Serving

  • 8 tortillas 
  • Salsa (pico de gallo is perfect) 
  • Shredded cheese (or cotija) 
  • Sour cream 
  • Guacamole

Instructions

  1. Warm a large saucepan over medium heat. Add 2 tbsp of olive oil, if desired.
  2. Add the bell peppers and onion to the saucepan and saute for 4-5 minutes, stirring frequently. Move sautéed veggies to a plate. 
  3. Add a splash of olive oil, if desired, to the same saucepan. Add the mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat.
  4. Add the Fajita sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes.
  5. Serve with warm tortillas and extra toppings such as salsa, shredded cheese, sour cream, and guacamole.
