This Japanese-inspired teriyaki mushroom bowl with rice is vegetarian-friendly and perfect for when you want to cook a quick meal for dinner. Light, yet flavorful and filling, this teriyaki rice bowl recipe will leave your stomach — and your tastebuds — more than satisfied.

This recipe is centered around your choice of white or brown rice and our Sizzling Sautés™ Teriyaki Mushroom Kit, which not only packs a savory punch but also saves you a lot of time in the process (cook time is only 25 minutes!). The kit contains a teriyaki sauce packet specially formulated to complement our Baby Bella Mushrooms and bring out the best in your recipes!

Sizzling Sautés™ Mushroom Teriyaki Rice Bowl

Description

Here’s how you can make this mouthwatering recipe that will no doubt be a weeknight staple in your household!


Ingredients

  • 1.5 cups of rice, white or brown
  • 1 bunch of broccoli, broken/cut into bite-sized florets
  • 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Teriyaki Mushroom Kit
  • 2 Tbsp olive oil (optional)
  • 4 green onions
  • Sesame seeds for garnish

*Sizzling Sautés Mushroom Kits are high in vitamin D. Monterey Mushrooms® "High Vitamin D" Mushrooms will provide you with 400 IU's of vitamin D per 3 oz. serving, which is 50% of the Daily Value as recommended by the FDA. 


Instructions

  1. Cook 1 cup of white or brown rice according to the instructions on the packaging.
  2. Steam broccoli for 5-6 minutes.
  3. Warm a large saucepan over medium heat. Add 2 Tbsp of olive oil, if desired.
  4. Add mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat.
  5. Add the Teriyaki sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes. 
  6. To assemble, serve each bowl with a scoop of steamed rice and top with broccoli and mushrooms.  Garnish with diced green onions and sesame seeds.
