Ingredients
For the Fresh Rolls:
- 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Thai Mushroom Kit*
- 6 fresh roll wrappers
- 1 bunch of lettuce
- 2 carrots, julienned
- 1 jalapeño pepper, julienned
- 1 Persian cucumber, julienned
For the Dipping Sauce:
- 1/4 cup peanut butter
- 2 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tbsp toasted sesame oil
- 1 tbsp sriracha
- 2 cloves garlic, grated
- 2 tsp ginger, grated
- 1/2 tsp red pepper flakes

Instructions
- Warm a large saucepan or wok over medium heat. Add 2 tablespoons of olive oil, if desired.
- Add mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat.
- Add the Thai sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes. Set saucy mushrooms aside on a plate.
- Whisk the dipping sauce ingredients in a small bowl to combine.
- Prepare rice paper according to product instructions.
- Fill rice paper with ingredients, wrap tightly. Enjoy!
