Sizzling Sautés™ Thai Mushroom Fresh Rolls

  • Cook Time: 20 Minutes
  • Yield: 4 Servings

Description

Given how easy these are to put together, you can prepare this tasty snack any day of the year for you and your loved ones!


Ingredients

For the Fresh Rolls:

  • 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Thai Mushroom Kit*  
  • 6 fresh roll wrappers
  • 1 bunch of lettuce
  • 2 carrots, julienned
  • 1 jalapeño pepper, julienned
  • 1 Persian cucumber, julienned

For the Dipping Sauce:

  • 1/4 cup peanut butter
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp toasted sesame oil
  • 1 tbsp sriracha
  • 2 cloves garlic, grated
  • 2 tsp ginger, grated
  • 1/2 tsp red pepper flakes

*Sizzling Sautés Mushroom Kits are high in vitamin D. Monterey Mushrooms® "High Vitamin D" Mushrooms will provide you with 400 IU's of vitamin D per 3 oz. serving, which is 50% of the Daily Value as recommended by the FDA.


Instructions

  1. Warm a large saucepan or wok over medium heat. Add 2 tablespoons of olive oil, if desired.
  2.  Add mushrooms to the saucepan. Cook for about 10 minutes, until slightly tender. Remove from heat. 
  3.  Add the Thai sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes. Set saucy mushrooms aside on a plate. 
  4. Whisk the dipping sauce ingredients in a small bowl to combine.
  5. Prepare rice paper according to product instructions.
  6. Fill rice paper with ingredients, wrap tightly. Enjoy!
