Mushroom Fresh Spring Rolls With Peanut Sauce

Description

This vegetarian fresh recipe rolls recipe is a flavorful twist on classic Thai spring rolls, cool, crisp, and packed with umami. 

Filled with tender noodles, fresh veggies, and Monterey’s Umami Stir Fry Mushrooms, these Thai fresh rolls with peanut sauce are light, satisfying, and simple to prep. Whether you're new to mushroom fresh rolls or just craving something fresh and plant-based, this easy dish delivers big flavor in every bite.


Ingredients

  • 1 Tbsp. sesame oil
  • 1/2 -inch knob of ginger, grated
  • 3 Tbsp. low-sodium soy sauce
  • 1 Tbsp. light brown sugar
  • 1 garlic clove, minced
  • (2) 3.5 oz. packages Monterey® Umami Stir Fry Mushrooms
  • 6 fresh roll wrappers
  • 1 bunch of lettuce, washed, dried, large leaves sliced in thirds (lengthwise)
  • 2 carrots, julienned
  • 1 jalapeño pepper, julienned
  • 1 Persian cucumber, julienned
  • 1 tsp. Chile oil (optional)

For the Peanut Dipping Sauce:

  • 1/4 cup peanut butter
  • 2 Tbsp. rice vinegar
  • 2 Tbsp. soy sauce
  • 2 Tbsp. honey
  • 2 Tbsp. lime juice
  • 1 Tbsp. toasted sesame oil
  • 1 Tbsp. sriracha
  • 2 cloves garlic, grated
  • 2 tsp. ginger, grated
  • 1/2 tsp. red pepper flakes

Instructions

  1. Place small sauté pan on medium heat. Add sesame oil, ginger, soy sauce, light brown sugar, chile oil (if desired),  and garlic clove. Cook until garlic has softened and brown sugar has dissolved. 
  2. Add sliced mushrooms and cook in sauce until slightly tender, about 10 minutes. Remove from heat.
  3. Whisk dipping sauce ingredients in small bowl to combine.
  4. Prepare rice paper according to product instructions.
  5. Fill rice paper with ingredients, wrap tightly. Enjoy!

Notes

*Stack a few lettuce leaves and roll them like a cigar, then slice into thin ribbons for a shredded look.
