Sizzling Sautés™ Veggie Chow Mein With Teriyaki Mushrooms

  • Cook Time: 18 minutes
  • Yield: 4 servings

Description

This recipe serves up to four people, so feel free to invite your friends or family for a fun and flavorful meal that’ll surely bring a smile to everyone’s faces!


Ingredients

  • 4 Tbsp cooking oil, divided
  • 6 oz chow mein noodles, cooked according to package instructions
  • 1 package 13.5 oz Monterey Mushrooms Sizzling Sautés™ Teriyaki Mushroom Kit*  
  • 1 medium onion, sliced
  • 2 medium carrots, julienned
  • 1 cup broccoli florets
  • 1 cup cabbage
  • ¼ cup soy sauce (or tamari, or coconut aminos) 
  • 1 Tbsp sesame oil
  • Sesame seed, for garnish

Instructions

  1. Prepare the chow mein noodles, par-cooked, according to the package. 
  2. While the noodles are cooking, heat 2 tablespoons of cooking oil in a wok or medium/large skillet over medium-high heat. 
  3. When noodles are prepared and drained well, add the par-cooked noodles to the wok/skillet. Cook for 1-2 minutes, allowing the noodles to crisp, then flip and cook for another 1-2 minutes. Transfer to a plate and set aside.
  4. In the same wok/skillet, add mushrooms and cook for about 10 minutes, until slightly tender. Remove from heat.
  5. Add the Teriyaki sauce packet and stir until the mushrooms are evenly coated about 1-2 minutes. Set aside.
  6. In the same wok/skillet, add 1 tablespoon of oil, the onion, and carrots. Cook for 2-3 minutes, or until the onions are translucent. Add the broccoli and cabbage. Stir and cook for 1-2 minutes, then season with salt and pepper and cook for 3 minutes more, until the vegetables are soft.
  7. Add the saucy mushrooms and crispy noodles back to the wok/ skillet, along with soy sauce and sesame oil. Toss well and cook for 2-3 minutes, until everything is well-combined. Garnish with sesame seeds. Enjoy!
