Our recipe is very easy to make. In fact, most of the ingredients involved are items you probably already have sitting around your home! Just wash some green beans and any other green veggies you like (fresh asparagus and broccoli are great additional options) and mix them with sliced mushrooms, mushroom soup and milk.

You can then add:

  • Cook Time: 40 minutes
  • Yield: Serves 6-8

Description

To make our green bean casserole with mushrooms recipe, you’ll need the following ingredients and instructions.

Ingredients

  • 8 oz Monterey Baby Bella or White Mushrooms*, sliced or finely diced 
  • 4 cups fresh green beans, broccoli and/or asparagus, cut to bite size
  • 1 tbsp water
  • (1) 10-1/2 oz can cream of mushroom soup
  • 3/4 cup milk
  • 1/8 tsp black pepper
  • 1-1/3 cup crispy fried onions (split 2/3 cup + 2/3 cup)
  • 1/2 cup grated cheese (jack, swiss or cheddar)
  • Optional: 8 oz can sliced water chestnuts (drained), 1/3 cup bacon crumbles, 1/2 cup sliced almonds (toasted)

Instructions

  1. Preheat oven to 350°F.
  2. Prepare mushrooms and veggies; place in a covered microwave dish along with 1 tbsp of water and cook on high for 4 minutes.
  3. In a large bowl, mix cooked veggies with soup, milk, black pepper, half (2/3 cup) of the crispy fried onions and your choice of optional additions: sliced water chestnuts, bacon crumbles, sliced almonds (toasted).
  4. Place mixture in a greased 2-quart casserole dish; bake at 350°F for 30 minutes.
  5. Top with grated cheese and the remaining 2/3 cup of the crispy fried onions; place dish back in the oven for 5 more minutes.
